Chili Lentils
















INGREDIENTS:

1 cup lentils

1 cup black beans or kidney beans

4 cups veggie broth

1 bell pepper

1 jalapeno

1 Anaheim chili

1 cup corn

1 red onion

1 lg tomato

1 small zucchini

1 squash

Soyriso

Handful garlic

1 tbsp. onion powder

1 tbsp. garlic powder

3 tsp cumin

3 tsp chili powder

1 tsp paprika

Salt/pepper to taste


INSTRUCTIONS

Sauté onion & garlic until onion is translucent.

Add peppers, veggies, seasonings and lentils & broth, cook medium-click-low until lentils are tender.

Enjoy!!

This recipe makes a delicious chili dip for chips for parties too!!
