Minestrone Soup
















*Serves 6-10, 10qt Saladmaster Roaster


INGREDIENTS:

1 medium yellow onion #2 cone

2 medium carrots #3 cone

2 medium ribs celery #3 cone

¼ cup tomato paste

2 zucchini #3 cone 

4 cloves garlic #1 cone

½ teaspoon dried oregano

½ teaspoon dried thyme

6 Roma tomatoes

4 cups vegetable broth

2 cups water

1 teaspoon fine sea salt

2 bay leaves

Pinch of red pepper flakes

Freshly ground black pepper

2 cups small shell pasta

2-3 cups cooked Great Northern beans or cannellini beans

Freshly grated Parmesan cheese, for garnishing or vegan parmesan (optional)


INSTRUCTIONS:

In a roaster preheat pan and then sauté onion & garlic until onion is translucent .

Add beans all veggies and seasonings and cook Medium-click-Low – It’s all you need to know!

Once veggies ae tender, add all liquid, and pasta return to medium heat until valve clicks again, once clicking and noodles are tender, soup is hot and ready to serve.

Top with parmesan and Enjoy!!
