Enchilada Casserole















*Serves 8-10,11”large skillet or Electric Skillet  

 

INGREDIENTS:

1 zucchini   

1 carrot  

1 small onion  

6 cloves garlic  

1 chayote  

1 sweet potato  

24 oz green salsa or choice of enchilada sauce  

4-8 oz cheese  

10-20 tortillas  

½ tbsp. salt  

½ tbsp. pepper  

(optional, add chicken, ground beef, beans, chopped chilies)  

INSTRUCTIONS:

Cut all veggie ingredients into a large bowl, season with onion powder, garlic powder, salt and pepper.

Add a small amount of sauce on bottom of the pan, if using meat or beans as next layer, then half the veggie mixture, add more sauce, layer tortillas, then layer the rest of the veggies, then remaining sauce, layer tortillas, top with cheese of choice, optional chopped chillies.and let cook, Medium-click-Low – It’s all you need to know!

When veggies are tender, serve and enjoy!
