Fiesta Salad

*Serves 8, 6.5 qt large thermal bowl


Ingredients:

4 cans (15 oz.) Black beans (drained and rinsed

or homemade)

16oz Bag (or 2 cups) of frozen Corn-thawed

1 chopped sweet red bell pepper #3 cone

1 chopped red onion #2 cone

Mixed greens and romaine

Avocados


DRESSING (put in blender)

8-12 tablespoons snipped fresh parsley

4-8 teaspoons snipped fresh cilantro

½ teaspoon dried dill weed

½ teaspoon fresh ground pepper

3 romaine hearts

1 teaspoon garlic powder

Directions:

In large bowl combine the beans, corn, sweet pepper, and onion. Add dressing items to blender with

teaspoon garlic powder and salt to taste. Pour dressing over salad mixture in large bowl & toss. Serve cold or

room temp.
