INGREDIENTS:
4lbs gold potatoes sliced #4 cone
2 cups freshly-grated sharp cheddar cheese
1/2 cup freshly-grated Parmesan cheese, plus extra for serving
1 white or yellow onion #2 cone
6 large garlic cloves, minced or #1 cone
Sauce:
3 tablespoons softened butter
1/4 cup all-purpose flour
1 cup vegetable stock
2 cups milk of choice
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 teaspoons fresh thyme leaves
INSTRUCTIONS
Sautee onions and garlic in pan until tender, save half for sauce and layer half in with potatoes and cheese.
Slice potatoes on #4 cone, spread evenly across 11" large skillet, layer and cheese, onions and garlic between and on top of potatoes.
Mix all the ingredients for the sauce in separate bowl until well combined. Then pour sauce over the potatoes, top with more cheese.
Start pan on medium heat, once vapo-valve clicks, turn to low and cook until potatoes are tender!
Finish with freshly grated parmesan on top and serve.
