INGREDIENTS:
1 cup raw soaked cashews
1 tablespoon nutritional yeast
½ tablespoon garlic powder
½ tablespoon onion powder
½ teaspoon black pepper
½ tablespoon dried parsley
½ tablespoon Italian seasoning
1 teaspoon sea salt or to taste
2-3 cloves fresh garlic
Water
1 package Fettuccini Noodles
2-3 cups Mushrooms of choice #4 Cone
5 cloves fresh garlic #4
INSTRUCTIONS
Make sure to soak raw cashews for at least 2-4 hours or overnight, this helps with the creaminess of the sauce.
Combine all the ingredients for the sauce in a blender and blend until creamy, adding liquid so sauce is runny.
You have two options for the noodles, you can cook separately per package instructions, or you can cook in the sauce.
If you are cooking in the sauce, layer a thin layer of sauce at the bottom of the pan, then add the dry noodles, cover with the remaining sauce **there MUST be enough liquid in the sauce for the noodles to absorb and cook thoroughly, 1 cup pasta need 2 cups sauce** top with onion, garlic and mushrooms.
Serve with Vegan Parmesan. (Dry Raw Cashews or Pine Nuts, Nutritional Yeast, Onion Powder, Garlis Powder & Salt to taste blended to parm consistency )
